Nearly all of my dinosaurs are at Lvl 40 on the game, but yet heaps of them are only ranked Bronze in battle Mode. I only have one dinosaur that is ranked Gold. Any ideas on how I can level up my bronze dinosaurs to Gold ones?
You can't unfortunately. A dinosaur that has a gold ranking is one you can get far into the game. My favourite is Albertosaurus (6000 health, up to 2000 damage).

I just started playing last week and only level 11, so maybe im wrong, but if you referring to gold dinos in the arena the only ones I have that are gold are my premium purchased ones.

You're not wrong. Most of my dinosaurs are level 40, and my gold ones are the very expensive, later in the game dinosaurs. If it's bronze as a level 1, it's a bronze all the way through.
